Chef Glenn’s Introduction to Nigiri – The Heart of Sushi

Before rolls became popular, nigiri is what started as sushi over 200 years ago.
In this class, you will learn how to make sushi rice, how to form the rice, and about the ingredients that accompany those pads of rice.
You will make a typical nigiri sushi platter that includes 5 kinds of nigiri sushi, 1 gunkan sushi, and 1 nori-maki (thin roll). We will add a slice of tamago (egg) to round out the platter.
Menu*: Bluefin tuna; hamachi yellowtail; seared salmon with avocado, white onions; shrimp, white fish with green onions and ponzu sauce; chopped tuna/yellowtail and takuan (pickled radish) in gunkan; kanpyo (simmered gourd strips) roll.
